Key Responsibilities
- The Demi Chef de Partie Pastry is responsible for executing production in the Pastry area and stations according to company recipes and presentation, as directed by the Executive Pastry & Bakery Chef or Chef de Partie Pastry. It is also their responsibility to ensure that assigned section recipe files are maintained and available to assigned staff.
- They practice batch cooking and preparation (for soufflés, puddings, crème brûlée, and other pastry items) and demonstrate an ongoing understanding of the ingredient consumption required for daily production in accordance with company recipes.
- They supervise and mentor Commis Pastry in an assigned service station during operational activities and assist in on-the-job training for new hire Pastry staff as directed by the Executive Pastry & Bakery Chef or Chef De Partie Pastry.
