Opportunity Description

1. 负责中厨房烧腊档口的全面运营管理,包括烧腊制品(如叉烧、烧肉、乳猪、豉油鸡等)的制作、出品及品质把控;
2. 维护并优化烧腊类菜品的标准配方、工艺流程与出品规范,确保风味稳定、食品安全及出品效率;
3. 管理烧腊原料验收、腌制、风干、烤制、保存等全环节操作,严格执行食品卫生与温度管控要求;
4. 指导和培训烧腊岗位员工,落实《餐饮服务食品安全操作规范》及相关内部管理制度;
5. 配合菜单更新与产品升级,参与新口味研发、成本分析及损耗控制工作。

1. 具备4年以上粤式或中式传统烧腊制作经验,其中至少2年在中高端餐饮企业担任烧腊主厨或技术骨干;
2. 精通烧腊核心工艺(腌制配比、风干条件、炉温控制、上色技法等),熟悉常见烧腊食材特性及储存要求;
3. 熟悉食品安全法律法规及餐饮后厨管理规范,持有有效健康证明;
